The legendary Bean Donut of Yaoundé, the capital of Cameroon.

In every street you will find a “donutariat“, the local fast food.
Vegetarians will just love it.

Recipe Bean Donut Side Dish (Fritter)

Ingredients
2 cans of kidney beans
1/2 leek
2 carrots
2 peppers (1 green, 1 red)
1 large onion
1 large clove of garlic
1 celery stick
30 g of parsley
2 soupspoons of pureed chili peppers wayfort (strong or mild)
Salt
Pepper
1 tomato paste
2 tomatoes
1 glass of peanut oil or olive oil

Bean Preparation

Rinse your beans and let them drain.
Finely chop your onion and garlic.
Chop the parsley, leek and celery.
Cut your carrots in slices, as well as your peppers.
Cut your tomatoes in dices.
Heat your oil in a saucepan over medium heat.
Fry your onion and garlic until it gets a caramel color.
Add the rest of the ingredients to the pan (tomatoes, carrot, parsley, leek, celery, peppers, tomato paste, salt).

Let cook all this during 15 min while stirring, add your beans with your puree of peppers, pepper the whole, let cook during 15 min so that all these condiments’ flavors go well into the beans.

 


Recipe for the Fritters

Ingredients
500g of wheat flour
12 g fresh baker’s yeast (1/2 bag of dry baker’s yeast)
A pinch of salt
Frying oil
100 g sugar
450 ml of water

Fritter Preparation

Dilute your yeast in warm water with the salt.
Dilute the sugar in the remaining water.
Pour your flour in a large hollow bowl.
In the flour pour yeast, then sugar water and mix by hand until you get a homogeneous dough.
Cover with a clean cloth and let rest for 45 to 1 hour.
Once the dough has risen, heat the oil and form balls with your fingers in the oil and let cook while watching that the color is golden.
It’s ready, serve yourself
