Preparation: 15 min (please make sure you do this 2 days ahead of time)
Cooking time: 1h15

5 tbsp dark soy sauce
4 tbsp. liquid honey
1 tablespoon of rice vinegar
1 tbsp of five spices
1 tbsp. salt
1 tbsp. sugar
1 tsp. Way hot pepper puree (hot or mild)


Pour all your ingredients into a mixing bowl to make the lacquer sauce.

Place the duck in a roasting pan and brush the entire duck with the lacquer sauce.

Put the duck in the refrigerator overnight, and continue to brush it from time to time throughout the day if necessary.

You can then leave the duck to dry for 1 or 2 days in the refrigerator if you wish, if not, the next day in the evening you can also cook it directly.

We will cook it for 15 minutes at a high temperature of about 230°.

Then 170° during about 1h or 1h30

You can accompany it with a rice cake, hoisin sauce, green onions cut into strips, cucumber cut into strips. or simply rice and vegetables.
