Preparation: 15 min
Cooking time: 55 min

  • 200 g organic quinoa
  • 6 organic dried tomatoes
  • 20 organic black or green pitted olives
  • 80 g organic feta cheese
  • 1 tsp. cumin powder
  • 1/2 tsp. sweet paprika
  • 1 tsp. Wayfort fresh chili sauce (mild or hot)
  • 1 tbsp. salt
  • 1 tbsp. pepper
  • 3 eggs

  1. Start by rinsing the quinoa thoroughly to remove as much of the saponins (bitter taste) as possible, then cook it in twice its volume of water. When the water starts to boil, reduce the heat and let it cook for 15 minutes. Drain the quinoa and put it in a large bowl.
  2. Preheat the oven to 180°C and oil a cake tin.
  3. Break the eggs into a small bowl and add the fresh chili sauce. You can adjust before cooking if it is strong enough or if it lacks a little spice. Mix.
  4. Then add the chopped dried tomatoes, the sliced olives, the cubed feta cheese and the spices. Add a little salt and pepper and don’t forget to taste it to know if it is seasoned enough or not.
  5. Pour the dough into your oiled pan and press it well with the back of a spoon to make it stick.
  6. Bake for about 50 minutes, or until the cake is golden brown.

Enjoy your meal!
